Literally the best part of living at the Copeland. Amazing beef barbacoa tacos and sopes. Everything is delicious and they’re super nice! Good is super fresh!

Excellent breakfast tacos, this is becoming my go to spot before work. The flour tortillas are particularly good. Definitely the best food truck in this lot

The star is the carbs. Their corn tortillas haw the right thickness. Their sopes are even better: snapping when cut and then being substantial without crumbling. I had the lengua, the suadero, and the fajita de pollo. Yes the two beef meats are great. But do not sleep on the chicken. Their chicken fajitas are moist and cooked with minimal charring, which means the chicken and spices become the taste front. Underrated: their onion-habanero mix. The trick: eat the onion on its own, and if you want put the habanero in the main dish. The onion absorbs the habanero heat and adds a texture. Outstanding work. This gas station will make me 50lbs fatter if I don't pay attention.

5 stars! This is the best of 6 hispanic food trucks in the parking lot. And it is not even close! All ingredients taste of high quality. You can tell that the staff takes pride in providing a great overall experience. The tables are cleaned regularly, there is adequate shade, and they even have toppings ready to grab.
